Salade d'Endives - Belgian Endive Salad (v)

  1. 1 belgian endives (clean and outside leaves removed)
  2. 1/4 of a cox apple (washed and cored, cut in half and sliced to the same size as the endive)
  3. 20g of shelled walnuts
  4. Chopped chives


  5. A pinch of salt
  6. 1 part high quality red wine vinegar or lemon juice
  7. 4 part walnut oil


Step one

Place 3 of the best leaves of 1 straight on the plate in a triangular formation, creating a small triangular nest in the middle. Cut the remaining endives into 2cm length pieces.

Step two

Place the cut up endives into a bowl with 2 and 3 and then toss. Place this mix into the triangular nest in the middle of the plate.

Step three

Garnish with 4.

Step four

Dissolve 5 into 6 and add 7. Whisk and pour over the salad to taste.
